Pfeffernusse Cookies

If you like raisins, this is for you. It was my Mom's and her brother's favorite.


3 Each Egg   Using electric mixer, beat until light.
2 Cup Light Brown Sugar
2 Cup Flour   Sift all together (black pepper is freshly gound)
12 tsp Baking Powder
12 tsp Baking Soda
12 tsp Salt
1 tsp Clove
2 tsp Cinnamon
12 tsp Black Pepper
1 Cup Almonds   Finely chopped
15 Ounce Raisins
2 Tbsp Citron

Pour egg mix into flour mix and stir to make stiff dough. Chill 1 hour or more if dough is too sticky. Roll rounded teaspoonful of dough between floured palms. Put on buttered cookie sheet 2" apart to allow for spreading.

Bake 375 degrees for 10-12 minutes until they hold their shape. Do not cook hard or dry. Cookies should be moist inside because they dry out as time goes by. While still warm, roll in powdered sugar, or shake in a paper bag. Store air tight for at least a week before eating. Makes ~6 dozen.
