Lemon Caraway Refrigerator Cookies


12 Cup Butter   Butter lightly softened; cream
1 Cup Sugar
1 Each Egg   Beat until light.
1 14 tsp Caraway Seed   Mix together; add and mix well. (Zest of 1/2 Lemon)
12 Each Lemon Zest
2 Tbsp Lemon Juice
2 13 Cup Flour
12 tsp Baking Soda
12 tsp Salt
1 tsp Water   (if too dry)

Roll in 1" balls and flatten with the bottom of a glass. Sprinkle with sugar. Bake at 375 degrees 7-8 minutes. Remove at once to cool.

The original recipe would have you shaping into 2" diameter rool. Wrap in wax paper and chill 1 or more hours. Remove from refrigerator and roll to make round. Cut 1/8" thick slices, sprinkle with colored sugar and bake ~10 minutes. (I found the balls easier.)
